Research directions
- Superior valorization of winemaking by-products and obtaining bioproducts:
- Identification and quantification of polyphenolic compounds in plant material (canes), grapes, must, wine, and winemaking by-products
- Extraction and quantification of bioactive compounds from winemaking by-products in order to obtain bioproducts
- Development of the methodology for the bioactive compounds extraction and their use in the enrichment of food products
- Valorization of winemaking by-products, in the form of functional ingredients, for the fortification of food products, in order to increase nutritional quality and antioxidant capacity
- Study of the elementary profile of wines and alcoholic beverages to identify fraudulent practices
- Sensory analysis of wines and grape-derived products
- Control through physico-chemical methods of compliance with the limits imposed by law and the rules for the application of the law of grapevine and wine.
- Investigation of the wines elemental profile in order to differentiate them according to geographical origin
- Study of polyphenolic compounds in canes, grapes, wine and winemaking waste for their use as markers of authenticity and typicality
- Multiparameter study on advanced analytical techniques for the verification and classification of wines and alcoholic beverages within the methodological norms imposed by law
Results
In the oenology field the researches has resulted in: optimizing grape winemaking technologies depending on their geographical and ampelographic origin; improving wine clarification, maturation, aging, stabilization and bottling technologies; establishing distillate production technologies and their aging; superior valorization of winemaking by-products.
The main wine varieties obtained through optimized technologies in the laboratory are: Fetească Regală, Feteasca Albă, Risling Italian, Sauvignon, Pinot Noir, Cabernet Sauvignon, Fetească Neagră, Burgund Mare.
